I don’t know about anyone else, but my favorite type of food is what is normally thought of as breakfast food. If we go to a restaurant that serves breakfast all day, I usually order breakfast food. So it makes perfect sense that at home we often have breakfast for dinner.
Since I’ve been making a lot of stuff in the dutch oven, I wanted to try breakfast. But making breakfast in a dutch oven would mean getting up at 5 or so to start the coals. That wasn’t going to happen, so I decided to try the Mountain Man Breakfast for dinner the other night.
- 1 lb.bacon
- 10-12 medium potatoes; sliced
- 2 medium yellow onions; diced
- salt and pepper to taste
- 1 green bell pepper; diced
- 3 cloves garlic; minced
- 3 cups grated Cheddar cheese
- 12 eggs; beaten
Heat the dutch oven with a full spread of coals under the oven. Cut the bacon into 1″ chunks. Add to the dutch oven and fry until browned to your liking.
I had green and red bell peppers on hand, so I added green and red pepper for some color. Add the onions, green pepper and garlic. Saute until the onions are translucent.
Add the potatoes and salt and pepper to taste. Put the lid on the dutch oven and rearrange the coals to have 1 ring around the bottom and 1 1/2 ring around the top. Bake for about 20 minutes until the potatoes are beginning to get tender.
Pour the eggs over the potatoes and bake for another 20 minutes. Stir gently every 5 minutes.
When eggs are cooked, cover the top with cheese. Replace the lid and bake until the cheese melts.
Serve with some salsa or Picante sauce, if desired
