Welcome to this week’s update.
I mentioned last week that I made up some Jalapeno poppers. Here’s another batch I made with some additional peppers. I find that it’s easiest to put them on a cookie sheet to freeze them. When frozen, I put them into containers for longer term storage. I also prefer to cook them frozen. I take them out of the freezer and pop them onto the grill. Using them this way keeps the cream cheese from dripping out of the popper. It also allows me to cook the bacon crisper than if I cooked them fresh.
As with everything on the homestead, I’m still learning about the bees. I went down to feed the bees the other day and found a bunch of them dead in the bottom of the robber screen. They were blocking the access into and out of the hive. I didn’t check on them at all this week, so didn’t spot this issue. I pulled the screen off and moved the dead bees out-of-the-way. It wasn’t a huge number of bees, but there were 100 or so there. I inspected the hive and found that there isn’t much honey stored for the bees. This means I need to feed them big time so they store up for the Winter. I put about 1 1/2 gallons of sugar syrup on each hive. Hopefully they store it up. I’ll switch over to heavy syrup soon. Heavy syrup has a thicker consistency and it allows the bees to store it without doing too much work on it before storing.
The tomatoes continue to pour in. Here’s this week’s harvest. The left bowl and the one in the front are mainly paste tomatoes. The other 2 bowls and the loose tomatoes are slicing tomatoes. Almost all of these have been reduced to juice and pulp and put into the freezer. When I have time I’ll processes that juice into paste. I already have more than enough to fill my big cook pot, so I’ll add more liquid as the paste thickens. I think I’ll try to do the cooking next weekend. Also in the picture are a few more jalapeno peppers that I’ll make into more poppers.
It is getting to the time in the year where I start giving stuff away. I have enough tomato puree to make all the paste I want. I still need to make up a batch of salsa. I will need to buy cilantro to put in it, but everything else will be out of the garden. It is always a big hit.
