Barbecue Beef Brisket

I’ve been cooking with a Dutch oven for about a year now.  I decided to try my hand at something that requires a little more prep and cook time.  I was over on Byron’s Dutch Oven page and came across his Barbecue Beef Brisket recipe.  I used that as a starting point, but changed it a bit to better fit my family’s tastes.

Dutch oven recipe: Crispy Italian Chicken

Crispy Italian chicken

While on my constant quest for Dutch oven meals for camping, I came across Crispy Italian Chicken.

This is pretty tasty and since it only has a couple ingredients, it is easy to put together.  Everyone liked it, so it will join our camping meal rotation.

Dutch oven recipe: Shrimp and Mango Tacos

Shrimp and Mango Tacos

As readers know, I like to cook and really like cooking in my dutch ovens.  But most of what we cook is fattening, but it is so good.  So I went looking for some lighter dishes.  I stumbled upon the Everyday Dutch Oven blog’s Shrimp and Mango Tacos and decided to give it a try.

As with the Cashew Chicken, the kids ate it, but didn’t love it.  I thought it was pretty good, but it isn’t something that I’ll crave.  I will likely make it again, but it will probably be a while.

Dutch oven recipe: Mexican Chicken Lasagna

As with last week’s Monday post, the entire post is over on my Camping with Fritz blog.  I like to keep my posts about recipes that I cook in the Dutch oven over there.  It just helps me keep things organized.  It also helps me track down the recipes I want to make on a camping trip.

We are always looking for recipes to make while camping.  I usually like to try them at home first.  That’s what I did with Mexican Chicken Lasagna.

  • Soft corn tortillas
  • 4 cups shredded cheese
  • 5 chicken breasts, diced
  • 1 Tbsp olive oil
  • 1 large jar salsa
  • 1 small onion, diced
  • 1 small green pepper, diced
  • 1 cloves garlic, minced
  • 1 tsp chili powder

Dutch oven recipe: baked ravioli

I’ve mentioned in other posts that I also do a camping blog, Camping with Fritz.  This weekend I made some baked ravioli in the Dutch oven.  Since I wrote it up over there, I figure I should just give a blurb here and point you over there.  So, here’s some Baked ravioli.

The other night we forgot to get the chicken out of the freezer.  So we had nothing ready for dinner.  I did a little digging around and we decided to make baked ravioli in the dutch oven.

 

  • 1 bag (25 oz.) frozen ravioli, thawed
  • 1 large jar (45 oz.) spaghetti sauce
  • 1/4 cup grated Parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup water

Dutch oven recipe: Spider cake

I already posted this over on my camping blog.  But this was very good.  It was even better when it was cold the next day.

I was over at the Everyday Dutch Oven blog and came across New England Spider Cake.  It looked good, so I decided to give it a shot.  Apparently a cast iron skillet with legs was called a spider.  This is the traditional pan used to bake this cake, hence the name.

Dutch oven recipe: Turkey loaf with garlic mashed potatoes

I already wrote this up over on my camping blog.

My wife and I are both gaining weight since I’ve started cooking in the dutch oven.  So we’ve been on the lookout for some lighter recipes to try out.  We decided to try one of the recipes that we usually try in the regular oven.  So we made Turkey Loaf with Garlic Mashed Potatoes.
