Regular readers know that I listen to The Survival Podcast.  For the not so regular readers, this isn’t about the whack job survivalists that run off to the mountains of Idaho to live in seclusion.  It is mainly for prepping for the likely disasters that happen to regular people.  You know the stuff, loss of a job, loss of a family member, power outage, natural disasters, that sort of thing.

Dutch oven recipe: Crispy Italian Chicken

While on my constant quest for Dutch oven meals for camping, I came across Crispy Italian Chicken.

This is pretty tasty and since it only has a couple ingredients, it is easy to put together.  Everyone liked it, so it will join our camping meal rotation.

Dutch oven recipe: Mexican Chicken Lasagna

As with last week’s Monday post, the entire post is over on my Camping with Fritz blog.  I like to keep my posts about recipes that I cook in the Dutch oven over there.  It just helps me keep things organized.  It also helps me track down the recipes I want to make on a camping trip.

We are always looking for recipes to make while camping.  I usually like to try them at home first.  That’s what I did with Mexican Chicken Lasagna.

  • Soft corn tortillas
  • 4 cups shredded cheese
  • 5 chicken breasts, diced
  • 1 Tbsp olive oil
  • 1 large jar salsa
  • 1 small onion, diced
  • 1 small green pepper, diced
  • 1 cloves garlic, minced
  • 1 tsp chili powder

Recipe: Chicken Pasta Toss

My wife has decided that we should eat a little lighter.  So she went digging through some of the cook books on the shelf and came up with this dish.  We did change it up slightly, but this is a dish that lends itself to substitutions.  Since garlic scapes are in right now, we decided to add some scapes to the recipe.  We also picked the peas from the garden.

Ingredients

  • Bow tie pasta
  • 1 medium tomato
  • 1 small onion
  • 1 medium zucchini
  • 1 small red bell pepper
  • 10 garlic scapes
  • 2 large garlic cloves
  • 4 chicken breasts

Dutch oven recipe: Scalloped potatoes and ham

I think that in every marriage, each person brings some of their own family into the union. Nowhere is this more true than with food. We each bring in recipes that we have grown up with. My favorite dish that my wife brought into our marriage is scalloped potatoes and ham. She makes this so good that her mother even recognizes that my wife makes it best. Continue reading

Dutch oven recipe: Mozzarella Chicken

We had chicken out for dinner.  But we didn’t want to do the same old thing.  I did some digging online and came upon a recipe for Mozzarella chicken.  We had most of the ingredients on hand, so decided to make it for dinner.

Ingredients

  • 1 chicken breast for each person

One of my favorite dishes is lasagna. It surprised me to find out that I can make it in my dutch oven. This means that I can make it while camping. I need to figure out how to size it down so we don’t have left overs.  That seems like an easy thing to do. Continue reading
